Is this the best quarantine dish yet? Mum shares her budget recipe for tortellini and beef soup – and she made it entirely from pantry essentials

As more people around the globe prepare for quarantine due to the coronavirus crisis, some are sticking to low-budget recipes prepared in bulk to feed their families.

One woman shared her recipe for Italian tortellini and beef soup to an Australian Facebook group revealing how she made it for just $3.10 per serve.

‘Great meal for home isolation as it is mostly pantry ingredients. This meal cost $22 and made seven adult sized meals ($3.10 a serve),’ the woman wrote in the caption.

The woman said the dish could cost as little as $15, however, if a lower budget pasta was used instead.

‘Cost could be $15 to $18 if you used a [cheaper] ravioli. I used Rana which is quite expensive (but we love it). Ragueletto would be a good inexpensive option though!’ she wrote.

To make the inexpensive meal, the mum said she first chopped the onion, carrots, garlic and mince. 

She then placed the staple ingredients in a large soup pot to sauté on a medium heat.

Next she poured in the tomato paste, spices and cooked until slightly brown before adding the crushed tomato, water, beef stock cubes, kidney beans, balsamic vinegar and sweet and sour sauce.

Once the vegetables softened the mum added spinach, basil and tortellini to the pot and left it to simmer on a low heat for ten minutes.

Prior to removing the pot from the stove she ensured the pasta was cooked through and then served it in a bowl with parmesan cheese on top.

She then poured in the tomato paste, spices and cooked until slightly brown before adding the crushed tomato, water, stock cubes, kidney beans, balsamic vinegar and sweet and sour sauce

Thousands of other social media users said they were excited to try the recipe for themselves.

‘Rana are absolutely delicious! I like stocking up on the rare occasions it goes on special,’ one said.

‘It looks delicious and nutritious! I will save the recipe and make it too,’ another woman commented.

A third added: ‘Looks amazing! My partner hates soups unless [it’s] super thick like that!’

How to make Italian tortellini and beef soup 

Ingredients:

1 onion

5 small carrots

4 garlic cloves

250 gram beef mince (lean)

1 tin crushed tomato

4 cups of hot tap water 

3 cubes of beef stock 

1 tin kidney beans

2 tablespoons tomato paste

1 tablespoon paprika

1 tablespoon Italian herbs

1 tablespoon ground cumin

1 tablespoon ground coriander

2 tablespoons balsamic vinegar

2 tablespoons ABC sweet soy sauce kecap manis

1 packet Rana tortellini (325 grams)

2 tablespoons dried basil

200 gram spinach

Parmesan cheese to top (optional) 

Method:

Chop onion, carrot, garlic and mince and sauté in a large soup pot on medium heat

Add tomato paste, spices and cook until slightly brown

Add crushed tomato, water, stock, kidney beans, balsamic vinegar and sweet and sour kecap manis to simmer on a low to low heat for 30 minutes

Once onions and carrot are soft enough to eat, add spinach, basil and tortellini into the pot

Place lid on pot and simmer on low heat for 10 minutes

Stir and once pasta has cooked through, serve in a bowl

Top with shaved parmesan cheese
