Oriental lamb stir-fry

(Serves four)

YOU NEED:

  • 1 garlic clove, peeled and chopped
  • 90ml Worcestershire sauce
  • ½ tsp dried chilli flakes
  • 1 tsp Chinese five-spice powder
  • 30ml runny honey
  • 2½cm root ginger, peeled and chopped
  • 300g stir-fry vegetables
  • 400g fresh egg noodles
  • Salt and pepper
  • 400g lamb leg steaks cut into strips
  • 2 tsps rapeseed oil
  • 2 tbsps flat-leaf parsley
  • 2 tbsps light soy sauce

METHOD:

  1. To prepare the marinade, mix the first six ingredients in a shallow bowl. Stir in the vegetables and the lamb, cover and set aside for ten minutes.
  2. Heat the oil in a large non-stick frying pan or wok. Remove the lamb from the marinade (reserving the marinade) and fry for three to four minutes, tossing frequently.
  3. Return the reserved marinade to the pan and fry the noodles, tossing gently, for two to three minutes.
    Season if required. Garnish with parsley and soy sauce, then serve.

Chicken Makhani

(Serves four)

YOU NEED:

  • 1 onion
  • 2 garlic clove
  • 1 each red chilli, green chilli
  • 750g chicken breast
  • 2 tsp each chilli powder, ground ginger
  • 3 tsp each turmeric, ground cumin, ground coriander
  • 50g butter
  • 1 tin chopped tomatoes
  • 1 chicken stock cube
  • 175ml double cream
  • 1 lemon
  • 2 tbsps fresh coriander
  • Rice and naan breads of your choice

METHOD:

  1. Chop the onion, crush the garlic and slice the chilli. Dice the chicken into chunks. Mix the spices.
  2. Melt the butter and cook the onions for five minutes, without allowing to brown. Add the chilli and cook for two minutes. Stir in the spice mix and cook for a further three minutes. Add the chicken, coating well in the spices. Add the tomatoes and a third of a tin of water, plus the crumbled stock cube.
  3. Simmer for 15 minutes, then add the double cream and season to taste. Add the juice of half a lemon and finish with fresh coriander.
  4. Serve with rice and naan bread, cooked per the pack instructions.
