Josie, 38, also revealed her nerves as she sent in a video message from Heathrow Airport before jetting off to Australia.
She admitted: "Hello you guys, so the rumours are true! I am heading to the jungle…. just arrived at Heathrow Airport now. I have said an emotional goodbye to Reggie [her son] and I keep thinking to myself: 'What have I done? What have I signed up for?'"
"I'm just hoping that I am a survivor but thank you for all your support! I just hope I get through this because I cannot stand creepy crawlies, I don't like heights, I don't like rats and I don't like snakes… so wish me luck!"
Rylan and Cat also discussed This Morning host Rochelle Humes' husband, JLS singer Marvin, joining the ITV show.
Josie will be joined by a host of famous faces in the jungle including ex-politician Nigel Farage, jockey Frankie Dettori, ex-EastEnders star Danielle Harold, First Dates' Fred Sirieix, and Made In Chelsea's Sam Thompson.
In preparation for the show, Josie revealed has been training herself to deal with hunger. She confessed in a pre-show chat: "I have never let myself get so hungry before that I have been 'hangry'. People might have to calm me down but I have been trying to build up my endurance and stamina in the run up to this."
She also revealed her colleagues on This Morning have all been incredibly supportive, in particular her close pal Alison Hammond, who took part in 2010.
Josie said: "I know she will be rooting for me. She has told me to try my hardest. Everyone at This Morning says I am going to love it. In fact, they are the ones who have really enticed me to do it! They are very supportive and I am going to miss them all.”
Despite admitting she dislikes many aspects of the show, Josie is excited about "being at one with nature" and is willing to "give it a go".
