Drummond shared a white chicken chili recipe in a 2010 blog post on The Pioneer Woman website.
“I love white chili. And just like regular chili, there are as many incarnations as there are grains of sand in all the beaches of the world,” she wrote.
“Some white chili is soupy and creamy, with chunks of chickens and beans,” Drummond continued. Some white chili is vegetarian, without an ounce of chicken in sight. Other white chili, like the one I make, is more of a bean-centered delight — simple, warm, hearty, and filling, with plenty of flavor to spare.”
The Pioneer Woman star shared her easy tip for the recipe — making it fairly basic but adding extra garnishes and toppings.
“I make ‘simple, hearty white chili,’” she noted. “Then I proceed to doctor the simple, hearty white chili with about a thousand different garnishes, and the ‘simple’ pretty much goes out the window.”

Drummond demonstrated how to make the easy chili recipe on an episode of The Pioneer Woman. “It’s a classic with the speed turned up,” she said. “It’s white chicken chili and, with a little help from the pressure cooker, it is super fast.”
Drummond made an easy spice mix for the recipe. She combined cumin, coriander, oregano, paprika, crushed red pepper flakes, salt, and pepper in a bowl.
Next, Drummond placed chicken breasts in the pressure cooker and set it to saute with olive oil. She sprinkled the spice mix over the top and seared the chicken on both sides. Drummond added chicken broth and put the lid on the pressure cooker, setting the valve to ‘sealing.’ She cooked it on the manual setting for 6 minutes.
After the time was up, The Pioneer Woman star used the quick release, then added her “finishing touches” to the recipe. Drummond shredded the chicken with two forks, put it back in the pressure cooker, and added a mixture of heavy cream and masa harina to thicken the chili. She added frozen corn, cannellini beans, and chopped green chiles and cooked the mixture until the corn was hot and the sauce had thickened.
Drummond made a self-serve station, leaving the chili in the pressure cooker and offering plenty of fixings. She served it with grated Monterey jack cheese, diced avocado, and lime wedges.
